KEERAI MEDU VADA  OR SPINACH MEDU VADA
Spinach is a wonderful green leafy vegetable.Spinach is a nutrition superstar,ever a fairly good source of iron.
INGREDIENTS
Oil for frying
Urad dal-1 cup
Rice-2tsp
Green chilli-4 to 6
Asafoetida-1tsp
Curry leaves
Coriander leaves
Spinach-1 bundle
Black pepper-1/2tsp
Salt
Onion-2
METHOD
1.Soak urad dal in water for 2 to 3 hrs.
2.Drain all the water from the dal.
3.In a grinder,add urad dal,green chilli,asafoetida,enough salt,black pepper and grind like fine paste[ add little water].
4.Take a mixing bowl ,add the grind paste.
5.Now add the chopped onion,chopped spinach,curry leaves,coriander leaves and mix everything well.
6.Heat oil for deep frying in a kadai.
7.Take water in a bowl ,wet you right hand ,take a round batter , make a hole and put it to the kadai.
8.Fry vada in medium flame until golden brown and crispy.
9.Now keerai medu vada is ready to serve with sambar ,chutney.
